Yolk free egg substitute improves the serum phospholipid profile of mice with metabolic syndrome based on lipidomic analysis

In this study, the impacts of egg consumption on mice model metabolic syndrome (MetS) were comparatively investigated. Mice divided into five groups (n=8): normal diet group (ND), high-fat (HFD), HFD with whole (WE), free-yolk substitute (YFES), and lovastatin (Lov). Main biochemical indexes a non-targeted lipidomic analysis employed to insight lipid profile changes in serum. It was revealed that WE could significantly improve serum by reducing body weight, low-density lipoprotein cholesterol (LDL-C) total (TC), while increasing high-density cholesterol. YFES exhibited remarkably better performance phosphatidylglycerol phosphatidic acids, decreasing phosphatidylinositol than WE. A 50 differential lipids biomarkers tightly related glycerophospholipids metabolism screened out. Carnitine C18:2 C12:1, SM (d18:0/12:0), (d18:1/14:1) upregulated compared reduced expression SREBP-1c Cpt1a, did not affect PPAR-α. Sphingomyelin positively TC (|r| > 0.6), PPAR-α negatively correlated triglyceride LDL-C levels. To sum up, attenuated HFD-induced MetS improving phospholipids, which account for its modulation glycerophospholipid metabolism.
